Halloween Night Pizza Muffins

Good Morning dear readers, the holidays are upon us. Every year we always order a pizza.  This started when we lived in Kentucky and the local video store gave out free pizza on Halloween night. I  always try to make holidays special especially since I'm a single parent. This year I decided since the boys go to parties I would make a homemade pizza type dish.  The beauty of this dish it can be frozen and heated up later. I adapted this recipe from a taste of home to fit my families needs and tastes.  So here's what you'll need:

1 large egg beaten
1/2 cup pizza sauce 
1/4 cup bread crumbs
1 tsp. Italian Seasonings
1 tsp. Onion Powder
1 lb. ground beef
1 cup Mozzarella Cheese  

Combine egg, pizza sauce, bread crumbs and seasonings.  Add meat to ingredients and mix it all up. Grease your 12 cup muffin tin and place meat mixture in the bottom and up the sides of cup. Fill center with mozzarella.  Preheat oven to 375 degrees and cook for 20 minutes or until meat is no longer pink.  Serve with extra pizza sauce or let cool.  The great thing is you can freeze for up to 3 months.  

Note: when reheating let defrost in refrigerator for 24 hours then heat up in microwave for 2 minutes.
