Good Afternoon dear readers, I'm a little late with this recipe. Computer had issues with the storm this weekend could not get signal to work. So sorry no cat art photos this past week will make up for it later. Kids of course will be home for the holidays. Time to figure out a special breakfast for everyone to enjoy. Since pumpkin is the go to Holiday traditional food, I wanted a breakfast recipe. We enjoyed the Christmas holiday banana pancakes so much I wanted to try it with pumpkins. So I played with the original recipe and here's what I came up with so yummy and delicious. Your kids will say it smells like Christmas.
1 cup pancake mix
3/4 cup milk
2 eggs
1 tsp vanilla
1 tsp pumpkin pie spice
1/2 cup pumpkin puree
Mix up first 5 ingredients and then blend in pumpkin until smooth. Add tablespoon oil to pan, warm up frying pan and cook until golden brown. Serve with whipped cream and syrup.
