Runaway Baked Onion Rings

Good Evening dear readers,  here's the other recipe I promised.  This one is definitely a keeper.  You want to know how I know because the boys ran off with the plate.  They have a very distinctive yummy flavor. I like the fact no frying was involved.  They were really easy to make.  I got the recipe from an old issue of Taste of Home.  I did change it up a little and  you'll like what I did to the recipe.  So here's what you'll need.


2 large sweet onions
2 eggs
1-1/2 cup corn flakes here's where I did the which I used frosted flakes instead
2 teaspoons of sugar only use if not using the frosted flakes
1 teaspoon paprika
1/4 teaspoon garlic salt
1/4 teaspoon seasoned salt

Cut and peel the skin off the onion.  Cut onions into 1/2 in. slices;  separate into rings.  whisk eggs in shallow bowl.  In another bowl crush cornflakes add sugar, paprika, garlic salt and seasoned salt. Dip onion rings in egg mixture then dip in corn flakes.  Arrange on a greased cookie sheet and cook at 375 degree for 15-20 minutes.  Bon Appetite and enjoy.

No-Fuss Potato Salad-An MS Moment Fail

Good Morning dear readers,  I finally made the semi home made potato salad. It did not turn out the way I had hoped it would.  The potatoes were a little too thin and the sauce just wasn't there.  So I'm posting this has a fail you can try it and tell me how it went for you.  I like the concept of using the box potatoes because no stress on my bad knee.  You know me love easy no standing around recipes. So here's what you'll need.

1 package scalloped potatoes
3 2/3 cups water
2 tablespoons butter or margarine
2/3 cup mayonnaise
1 tablespoon prepared mustard
2 hard cooked eggs, chopped
Paprika, optional

Set the sauce packet aside to use later from potato box.  In a large pot add potatoes and 3 cups water bring to a boil.  Once boiling let simmer for 15-20 minutes.  Rinse with cold water drain and put in bowl, cover and refrigerate.  In another pot melt butter add sauce packet  and gradually add the remaining water stir until smooth.  Bring to a boil.  Remove from heat and refrigerate for 30 minutes.  Stir mayonnaise and mustard into sauce then add to the potatoes.  Add chopped eggs and sprinkle top with paprika.  

Note in talking with Conor I think we forgot to boil the sauce.  I call that an ms moment.

Rubber Stamp Thrifting Haul

Good Morning dear readers, when I went to get Frankie's stuff the other day I paid a visit to the thrift store. They never fail to surprise me. It was a pleasant surprise.  I've been seeing stampin up stuff online and been wanting to get some but with my budget got to watch it.  I found a package from stampin up of 11 stamps and the clam shell stamp from Michael's all for under $5.  I was in art journaling heaven.  So here's a pic and be sure and check your thrift stores you never know what you'll find.

Update On Frankie

Good Evening dear readers,  Frankie had his visit to the vet and yes he has another bad sinus infection.  He is currently on antibiotics and nose drops (ever try to give an 8 lb cat nose drops).  He is doing a lot better and his breathing has greatly improved.  He will be getting an x-ray after he's finished his meds to check for the underlying condition suspected Asthma.  Odd form of treatment is he's having to eat goats milk yogurt in his food, of course he gives me dirty looks when I put it in his food.  He does eat it and is doing fine.  Here's pic's of him feeling better.

Journal 52 Prompt--Tech

Good Evening dear readers,  Well Frankie is feeling better and I got to finish my page in time.  I based my page on my computer crash where I was offline for two weeks.  I ran into the thrift shop today and found a lot of cool rubber stamps which I will put in another blog post.  I gesso'd the page and then covered it with apple red acrylic paint and then ran a small brush of light green acrylic paint.  I rubber stamped around the edges in black studio g ink.  I then glued the pictures which I got from magazines and newspapers.  Then took the letter stencil and wrote out computer crash in yellow and didn't like how that look then changed to a black oil pastel crayon and now its done.






Raley's Sale and Emergency Item for Frankie

Good Afternoon dear readers,  I had to make an emergency run to Raley's today and took advantage of sales going on now.  The emergency is Frankie has another really bad sinus infection which will probably turn out to be Asthma.  The vet put him on Goats Milk Yogurt.  This is supposed to help his tummy with all the antibiotics he's taking.   The sales I took advantage of  include buy 4 Kellogg's items get them for $1.99 each and various other items which include the following:


Buy 3 - 2 liter Dr Pepper get them for $1.29 each
2 Kellogg's Cereal
1 Rice Crispy Treats
1 Kellogg's box fruit snacks
2-Best Food Mayonnaise at $2 each which allowed me to use a coupon for $1 off fresh meat when you buy Unilever products (peelies found at wal-mart)
2 small sodas for conors help with shopping 
1 donut 
1-3 musketeers
3-goats milk yogurt a little pricey at $2.49 each
1-package of boneless pork  at $6.49 I'm not a big fan of their meat dept but the deal with the mayonnaise made up for it.

Art Journal Page-Rise Above the Normal

Good Afternoon dear readers in attempting to deal with my PTSD flash back the page was a disaster the color was all wrong so finally covered it with gesso and started over.  Hope you enjoy it.  Love this color the background used acrylics in cranberry and Mosaic blue. I created the flower petals out of card paper and glued them to the page and put a wooden flower bead on it to simulate the center of the flower.  I rubber stamp around the page with a frame stamp and wrote art in the center with a paint pen.  I edged the page with a black oil pastel crayon. I found the phrase Rise Above the Normal from newspaper and glued it in and went over it with a pink marker.  The owl was from a card and I cut him down glued him in and the edge piece which does not show in photo was from a scrap booking bag from thrift store.  Enjoy the page sorry about photo still learning new camera.

Small Rite Aid Run spent only $.89

Good Afternoon dear readers,  I made a small trip to Rite Aid today had $6 in up rewards to use.  I got those from a trip earlier in the week from buying $15 in snack items get $5 up rewards and some other buy 2  cookies and get $1 back (didn't have camera).  So went back today to get the free toiletries I need for the family.  Here's what I got:

1 Suave 22 oz size for $2.39
2 generic toilet rolls 4pk for $1 each
1 box tissue for $1
1 dawn dish soap for $.99

Murder Mystery Food-Breakfast Muffins

Good Morning dear readers,  we are revisiting the murder mystery "Sinister Sprinkles" by Jessica Beck.  This time instead of donuts we are cooking her breakfast muffins called Puffin Muffins.  They are really good and you can smell the pumpkin spice while its cooking really yummy. The recipe has been adapted to fit my family and budget.  So here's what you'll need.


1/3 cup margarine or butter, softened
1/2 cup sugar
1 egg beaten
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
3/4 cup milk whole or 2 %, I used 2 %
1 teaspoon cinnamon
1 teaspoon nutmeg
you can add raisins about 2 oz. I chose not too.

Next combine margarine, sugar and egg until blended.  It needs to be smooth when done.  In a separate mixing bowl sift flour, baking powder, salt, pumpkin pie spice, cinnamon, nutmeg together.  Add these two bowls together and then add your 3/4 cup milk and mix together.  They will be thick so I suggest using a large spoon.  Conor tried the hand mixer not recommended.  If your going to add raisins you can do it now.

Set your oven to 350 degrees.  These muffins cook for about 18-22 minutes.  Mine took about 20 minutes.
Line your muffin tins with the paper cups makes for easier clean up.  Fill the cups half way.  Then take a spoonful of a cinnamon/sugar mix(1 tablespoon sugar and 1 teaspoon cinnamon together) and sprinkle on muffins. Then place in oven.  When done let sit for 5 minutes and then remove to plate.  Bon appetite and enjoy.

Altered Book Art

Good Morning dear readers,  We are back with a new camera in place, so bear with me as I'm learning its little quirks.  I've been trying other things with my art and wanted to share another form of it with you.  It's taking a book and altering its pages with mixed media and its quite fun.  I found a childrens old song book at the thrift store.  I gesso'd some pages but you leave some of the words ungesso'd as part of the art, which I have done.  The page I worked on had trees in it.  After gessoing I brought the trees back out using oil pastels and colored pencils.  I went over the oil pastels with water colour and this actually sealed it so it would not rub off in my hands.  I rubber stamped the corner and highlighted sentences with acrylics.

Finally back with the photos unfortunately the video cam was a bust it didn't want to work thought mom was going to blow a fuse.  So mom went and got me another little red box camera that vivitar thingy.  So here I am and will have more post later.  Oh moms been running around like crazy murder mystery muffins will be tomorrow and Conors birthday is tomorrow.
