Decadent Chocolate Quick Bread

Good Afternoon dear readers,  I wanted to do something different for the recipe this week. Since Conor liked the pumpkin bread  so much I thought we would try chocolate. I found a lovely chocolate bread recipe in one of the taste of home books.   I love the smell of chocolate bread and this recipe is so yummy and easy to make and most items can be found in your pantry. I altered the recipe to fit my families needs.  So here's what you need:


1/2 cup butter, melted
2/3 cup brown sugar
2 eggs
1 cup melted semi-sweet chocolate chips
1 1/2 cups of applesauce-canned
2 tsp  vanilla extract
2 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup semi-sweet chocolate chips

Here's what you'll need for the glaze:
1/2 cup semi-sweet chocolate chips
1 tbs butter
2-3 tbs milk
1/2 cup confectioners sugar
1/2 teaspoon vanilla extract

Add butter and sugar to mixing bowl and blend with hand mixer.  Stir in melted chocolate and eggs.
Add applesauce and vanilla extract mixing all together and set aside.

Combine dry ingredients in separate bowl i.e.  flour, baking soda, baking powder and salt.  Then proceed to add to wet ingredients mixing well and then fold in chocolate chips.

Pour batter into 2 medium sized baking pans(greased).  Set oven to 350 degrees and bake for 35-40 minutes. Insert fork for doneness.  Let pans set for 10 minutes to cool.  When still warm pour glaze over it.

Making the glaze melt chocolate chips and butter in saucepan, stir in milk. Turn off burner and stir in powdered sugar, vanilla and salt. Drizzle over warm bread. Yields 2 medium sized loafs.  These also would make great valentines gifts wrapped in pretty tin foil.  Bon Appetite.
